Vegan Cookie Dough Protein Balls (GF, RSF, Oil Free)



These lil' babies are a current obsession of mine. Great for snacks for work, uni, school, you name it! Though they rarely last 2 days in a row at my house (between my sister and I), they are really easy to make if you have time constraints and good if you're one for prepping meals.

Cookie Dough Protein Balls (recipe altered from One Green Planet)

Prep: 10 minutes.

Makes 15-18.

You will need:

1 cup rolled oats
2 tbsp ground flax meal
1 cup almonds
1/2 tsp salt
1 tbsp vanilla essence
15g vegan vanilla protein powder (like a pea and rice protein)
4 tbsp maple syrup
1 tbsp peanut butter
1 tbsp water
1/4 cup vegan dark chocolate chips

Method:

1. Blitz oats, almonds and flax meal until a fine meal is achieved in a food processor. Add rest of the ingredients minus choc chips until a dough is formed.
2. Using a spoon, mix in the chocolate chips. Roll into balls as desired.
