Banana, Acai and Raspberry Vegan Ice-Cream


To counter-balance the last not-so-healthy chocolate ice-cream post, I decided to be inventive today and make an ice-cream using acai berries. Acai berries are extremely healthy and high in anti-oxidants; though they are very bitter which is why in this recipe I have added raspberries to make this ice-cream sweeter. The result was a delicious and vibrant ice-cream, enjoy!

You will need:

2 bananas
1/4 cup or more of almond milk (or another plant-based milk of your choice; today I decided to use almond milk)
1/2 cup frozen raspberries
100 g of frozen acai berries


Method:

Mix all ingredients in a blender, pour into a metal container, cover in glad wrap and place in a freezer. Every 30 minutes whisk the mixture until it gets thick and ice-creamy. Don't forget: if you are unsure of this process, have a quick look at my how-to post.
