Vegan Sweet Potato Cinnamon Pecan Rolls (Gluten Free, Refined Sugar Free)


This recipe is a result of an experiment in the kitchen, where I wanted to somehow incorporate sweet potato into a cinnamon roll! They actually rose because of the sweetness of the sweet potato, and don't taste like a bad gluten free roll! Not to mention that they are sugar free, and most importantly, vegan!

Serves 14. Prep and cooking: around 2-3 hours + overnight.

You will need:

For the dough:


1/2 cup unsweetened almond milk
3 tbsp vegan margarine
1/4 cup + 1 tsp powdered stevia (separated); might need less (according to taste)
dash salt
1/2 tbsp dry yeast
1/4 cup water
1 flax egg (1 tbsp ground flax to 2.5 tbsp water)
1/2 cup steamed mashed sweet potato
1/2 tsp cinnamon
1/4 tsp nutmeg
1 1/4-1/2 cups brown rice flour
1/2 cup corn flour
1/2 cup potato flour

For the swirl:

2.5 tbsp melted vegan margarine
1/4 cup coconut sugar
1 tsp cinnamon
1/4-1/2 cup crushed pecans

Method:

1. In a small saucepan on low heat combine milk, margarine, salt, and 1/2 cup stevia. Let margarine melt, and milk mix to get smooth. Let cool to room temp.
2. In a bread maker, add water, yeast, and 1 tsp powdered stevia. Leave for 5 minutes.
3. In another bowl, mix your sweet potato with flax egg.
4. In another bowl, sift together and mix 1 brown rice flour, 1/2 cup corn flour and 1/2 cup potato flour, and all the spices.
5. Add the potato and flour to the bread maker. Have the setting on "dough".
6. If mix is too wet (depends on how much liquid you have with potato) add more flour. I ended up adding an extra 1/2 cup brown rice flour.
7. Let everything mix in bread maker for around 30 minutes. Then put in a bowl, cover with cling wrap and let sit for an hour or so. I let mine rise on the bench in the sun for around an hour, and then put it in the fridge overnight.
8. When ready to assemble, roll the dough on some floured baking paper. Cut into rectangles, brush with margarine, and sprinkle with cinnamon, coconut sugar and pecans. Roll up. Should make around 14 rolls. Place in a greased baking Pyrex dish. Brush the rolls with remaining margarine.
9. Let the rolls rise again for another hour.
10. Preheat oven to 180 degrees. Then bake rolls for 20-25 minutes until golden.
11. Serve with some melted chocolate or icing!
