Healthy Passionfruit Vegan Ice-Cream


Today I decided to have more faith in my food processor: namely, attempting to make an ice-cream with only two healthy ingredients and no added liquid such as almond milk or coconut water. And I was successful! Huzzah!

You will need:

2 frozen bananas
1/4 cup of passion-fruit pulp, plus more if you want to drizzle some on top of the ice-cream when serving. If you can't get hold of passion-fruit, you can use store-bought passion-fruit pulp, but keep in mind they often soak the pulp in a sugar water, so it is a good idea to drain the can and rinse the pulp in water before using it.


1. Combine all your ingredients in a food processor. Continue scraping down the banana; you may need to help your food processor along by squishing the banana, but persevere! Eventually you should get a smooth mixture. If you are really struggling, add 1 tbsp of almond milk, and add more as needed.
2. Pour into a metal tray, cover with glad wrap and place in a freezer. Whisk every 30 minutes until ready to serve.
