Dates are commonly used to create caramel tasting sauces and toppings in vegan recipes. I decided to use dates with coconut cream, as firstly it creates that caramel taste, and secondly, means there is no need to add sugar. I was originally going to do this recipe with pecans, but as I didn't have any I had to use walnuts. So by all means substitute the walnuts for pecans!
You will need:
400 ml can of coconut cream or milk (pour out the water at the bottom of the can)
11-15 pitted dates
handful of walnuts
2 tsp vanilla essence (optional)
1. In a food processor, combine the pitted dates and coconut milk. Mix until combined. Add a handful of walnuts and roughly combine.
2. Pour into a metal pan, cover with glad wrap and place in a freezer. Whisk every 30 minutes until ready.
3. When serving, top with some crushed walnuts.
